1.23.10

Orange chicken Stir-fry
2 cups uncooked rice
2 cups water
3 TBsp frozen (thawed) orange juice concentrate
2 Tbsp soy sauce
1/2 tsp corn starch
1/4 tsp garlic powder
1 lb chicken breast cut into strips
1 bag frozen broccoli, carrots, and water chestnuts, thawed and drained.

*cook rice in water as directed
*mix: juice, soy sauce, cornstarch, & garlic powder until smooth
*heat skillet, add chicken and cook 5-8 minutes until cooked
*stir in mixture and veggies
*recude heat, cover and cook 6-8 mins until veggies are crisp.
*serve over rice

We have been married for 4 years now and I am just now getting consistantly good at cooking a meal. Mind you...there are still times he tells me "thanks but lets not repeat that meal!" I have started going to a blog called "Picky Pallete" (the link is located on the side of my blog) and I print out the 3 or 4 recipes I want to try that week. I then for my shopping list from those recipes, and fill in with other necessities. It has made my life so much easier, and I have not had to stress everynight wondering "What should I make tonight?" Oh, and it has helped us eat healthier! OK...so I totally went off on a tangent! Wow! Sorry, but I am so proud of you for trying to improve your cooking skills. I have learned that my husband feels my love most when I have dinner ready each night. The way to a man's heart is through food? I believe it! ;)

I think when we made that we just used a bag of stir fry veggies instead of those specifically.
