Monday's Menu: Meatloaf

This is seriously the best meatloaf recipe ever... Don't believe me? Try it?

Meatloaf

Mix:
2 lbs hamburger
1pkg Onion Soup MIx
1 med. Carrot grated
Chopped onion
2 eggs
1 can tomato sauce
handful of oatmeal
crushed saltines or breadcrumbs.

Glaze:
1/2 cup ketchup
1 Tbsp mustard
1/3 cup brown sugar

Preheat oven to 350 degrees. in a 9x13 pan cover bottom and sides with tinfoil. Put in hamburger mixture then spread glaze on top. Cook for 1 hour 30 mins!

Monday's Menu: Sweet & Sour Meatballs

My friend Brooke and I do a dinner swap with each other once a week. One night she cooks and brings over some to us and one night I cook and take some over to them. It is so nice especially for someone like me who doesn't enjoy cooking. Anyway, this recipe is one that we fell in love with!!

Sweet and Sour Meatballs

Meatballs:
1 lb ground beef
1 egg
3/4 cup oatmeal
salt and pepper

Sauce:
1 green pepper
2 Tbsp oil
3/4 cup crushed pineapple
2 Tbsp. Soy Sauce
1 small onion
1 cup ketchup
1/2 cup honey

Preheat oven to 350 degrees. Mix the ingredients for the meatballs roll into small balls and bake for 15-20 minutes
Cook onion and pepper in oil until tender. Add ketchup, pineapple, honey, and soy sauce. Simmer for 10 minutes thn add meatballs. Cook on very low heat for 20 minutes.
Serve over rice!

Monday's Menu: Chicken Biscuit Casserole









Easy and So Good!!!

Chicken Biscuit Casserole

1 Can Pillsbury Biscuits
1 can Condensed Cream of Chicken Soup
1/2 cup Sour Cream
1/2 Stick of butter
2 Cups cooked and shredded chicken
1 cup shredded cheddar Cheese
3 Tbsp milk

Preheat oven to 375 degrees. Mix everything, except biscuits and butter, in a 9x9 casserole dish. Place biscuits on top of mixture and then cut butter into small pieces and place on top of biscuits. Cook for 35 mins or until biscuits are golden! Enjoy!

Monday's Menu: Coconut Chex Mix





My sister made this for a family get together and I am hooked... Literally I crave this stuff. So take this to your next party and people will be asking for the recipie

1.5 boxes of Rice Chex
1 cube butter
1 1/2 cup sugar
1 1/2 cup Karo Syrup
Slivered Almonds(opt)
6 oz shredded coconut
1 1/2 tsp. coconut extract

Combine syrup, sugar, and butter in a pan on the stove. Mix until sugar is dissolved and butter melted. Add coconut extract and almonds. Mix. Then pour over the Chex and coat... 


Seriously salivating right now. Try it!

Monday's Menu: Baked Penne


  This recipe was so delicious! I can't wait to make it again! It was also really easy to make.

 

Baked Penne

1/2 lb. extra-lean ground beef or Italian Sausage (I used beef)
1/2 cup chopped onions 
1/2 cup green peppers
1 jar(24 oz.) spaghetti sauce
1 tub(10 oz.) PHILADELPHIA Italian Cheese and Herb Cooking Creme, divided
1 cup KRAFT Shredded Mozzarella Cheese, divided
3 cups cooked penne pasta

Heat oven to 350°F. 

Brown meat with vegetables in large nonstick skillet. Stir in spaghetti sauce, 3/4 cup cooking creme and 1/2 cup mozzarella; cook and stir 2 to 3 min. or until mozzarella is melted. Add pasta; mix lightly. Spoon into 2-qt. casserole; top with remaining cooking creme and mozzarella. Cover. Bake 20 min. or until heated through, uncovering after 15 min.

Monday's Menu: Cream Cheese Chicken

I made this recipe a couple weeks ago. It was such a hit. Kirk ate 3rds I think and he said this was one I could cook for when we have friends over. That is a good sign. I had to share it.
I got it from this website


Cream Cheese Chicken!
--1 can cream-of-something soup (I used Chicken)
--1/2 cup chicken broth
--frozen chicken pieces
--packet of Italian salad dressing mix
--2 cloves minced garlic
--block of cream cheese (to add later)
-Penne Pasta (to cook later)
 
Put everything except for the cream cheese and pasta into the crockpot. Cook on low for 6 hours, or until the chicken is cooked through and begins to shred. Shred the chicken with two large forks, and mix in the block of cream cheese. Switch the crock to high and cook for another 30 minutes, or until the cream cheese is fully melted.
Cook and serve over pasta!

Monday's Menu: Hawaiian Haystacks


These are pretty easy to throw together and they are delicious

*Rice
*Olives
*Celery cut up
*Pineapple tidbits
*Shredded Cheese
*Shredded Chicken
*Can of Cream of Chicken Soup
*Anything else you like on top
*MIlk


1. Put the Rice in a Rice cooker and cook
2. Make the Cream of Chicken Soup with Milk and add the shredded chicken.

Put some rice on your plate cover with the chicken and chicken soup and cover with the toppings you like. Enjoy!

Monday's Menu: Easy Dipping Caramel

Easy Dipping Caramel
We were invited to a party yesterday and they had this caramel. I have been wanting it ever since so I am going to make it. Not to mention Apples sounds good too.
*Crock Pot
*Water
*Can of Sweet and Condensed Milk
*Apples

Put the unopened can of condensed milk in the crock pot and submerge it in water.
Turn on the crock put 8 hours on low.
Let cool in the fridge
Stir and heat up in Microwave.
Enjoy your apples dipped in Caramel.

Monday's Menu: Chimichangas

My mom makes the best Chimichangas. I haven't been able to find one that I like better. Maybe because I like simple. When we were there Halloween weekend I asked her to make them with me so I could learn how. So easy. You should try these.

*Flour Tortillas
*Chicken (boiled and shredded)
*Rotel (Mild tomatoes and chiles)
*Onion (chopped)
*Shredded Cheese
*Oil to fry them in
*Guacamole
*Diced Tomatoes
*Lettuce


1. Mix the Chicken, Rotel, Onion, and Cheese. (My mom never measures these kinds of things she just guesses.) So depending on how many people and the flavor you want is how much to mix in.
2. Heat up the tortillas so you can wrap them and they won't break.
3. Put a little of the chicken mixture in the tortilla and wrap up.
4. Fry it in the oil until golden brown.
5. Serve with guacamole, tomatoes, and lettuce.

Monday's Menu: Coconut Chex Mix

Coconut Chex Mix
 
Ingredients:
1 box chex mix (rice or corn)
1 1/2 cups karo syrup
1 1/2 cups sugar
1 stick butter
1 1/2 tsp.coconut oil
6 oz. shredded coconut

step 1: in sauce pan add karo syrup, sugar, and butter, cook until sugar is dissolved
step 2: take off heat and add coconut oil and coconut
step 3: pour over chex cereal
step 4: stir to coat cereal evenly
step 5: enjoy!!!
Today's Menu is: super easy, takes maybe 10 minutes and it is so yummy!!!!

Monday's Menu: Ranch Chicken

Ranch Chicken

*1/2 cup Ranch
*1 TBSP flour
*1/4 cup Parmesan cheese
*4 Chicken Breasts
*1/4 cup Cheddar Cheese

Preheat Oven to 350 degrees
Mix all ingredients (except Chicken Breasts and cheddar cheese)
Coat chicken breasts
Put in an 8x8 pan
Sprinkle with Cheddar Cheese
Cook 25 mins or until chicken is done.

Monday's Menu: Homemade Tomato Soup

Tomato Soup
(Kim)

Ingredients

  • 4 cups chopped fresh tomatoes
  • 1 slice onion
  • 4 whole garlic cloves
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons white sugar, or to taste
  • 3 Tablespoons Basil, use as needed

Directions

  1. Saute in a frying pan lots of chopped garlic in olive oil and then add the chopped onions (2 large) and saute until tender. Add chopped tomatoes (with skin and seeds) then put it in a stock pan and bring to a boil. Then add the chicken stock and cook for about 20 minutes. Cool slightly and add fresh chopped basil (about 3 TBSP). Puree with a blender.
  2. In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.
Enjoy. Great with a Grilled Cheese Sandwich.

Monday's Menu: Tortilla & Black Bean Pie

Once again my recipe is coming from my Pinterest browsing and it is a good one. I made a few changes to the original recipe because I didn't want to go shopping and I didn't like some of the ingredients so here is the recipe with my changes.

Tortilla & Black Bean Pie

  • 4 flour tortillas (10 inches)
  • 2-4 tablespoons taco seasoning
  • Dash Onion Salt
  • Dash Salt and Pepper
  • Dash Garlic Salt
  • Couple Dashes ground cumin
  • 1 can Kidney Beans, drained and rinsed (I only used 3/4)
  • 1cans (15 ounces each) black beans, drained and rinsed (I only used 3/4)
  • 1 1/2 cups water
  • 1 can corn (I only used 3/4)
  • 8 ounces cheddar cheese, shredded (2 1/2 cups)
  • 3/4 lb of ground beef Mine didn't turn out this pretty... Dang you Martha Stewart

Directions

  1. Preheat oven to 400 degrees.
  2. Cook Ground Beef and drain.
  3. Add onion salt, cumin, garlic, and salt and Pepper
  4. Add beans, corn, taco seasoning and water, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes.
  5. Taste and adjust for seasoning.
  6. Fit a trimmed tortilla in bottom of deep pie tin or cake pan; layer with 1/4 of the beans and 1/2 cup of cheese. Repeat three times, using 1 cup cheese on top layer. Bake until cheese melts, 15 to 20 minutes.

  7. put a plate on top of the cake pan and flip over to get the tortilla pie out. Cut into slices and serve. You can also serve with ranch if they like that or lettuce.

Monday's Menu: Oreo Yummies

Those closest to me know that Oreo's are my weakness. They have to be double stuffed of course but when I was pregnant I seriously ate a whole package by myself in like 2 days. Anyway I love anything to do with Oreos and browsing Pinterest and saw this..... Mouth watering yet..I got the recipe from here and had to try it.

No Bake Cookies and Cream Bars

Ingredients:

  • One 16 oz package of Oreo Cookies
  • 5 cups large marshmallows
  • 4 tablespoons butter

Directions:

  1. Butter an 8X8 inch baking pan. Line the baking pan with parchment paper letting the paper extend up two sides of the pan and overhang slightly on both ends. Butter paper; set pan aside.
  2. In the bowl of a food processor fitted with the metal blade, pulse Oreos until ground.
  3. In a large, microwave safe bowl, melt butter and marshmallows in the microwave until puffed, about 1½ – 2 minutes. Stir in ground Oreo Cookies until combined. Transfer to prepared baking pan. Using a piece of wax paper, press rice mixture evenly into prepared pan.
  4. Let set up for at least 10 minutes. Cut into bars and serve.

Yields: 16 bars


I split the recipe in half and I didn't have a food processor so I put the Oreos in a bag and used a rolling pin to mush them... They are delicious..

Monday's Menu: Homemade Pizza Crust

I finally got a Pizza Stone! I am really excited about it. I was even more excited when my friend gave me a really yummy homemade pizza dough recipe.

Pizza Dough/Crust

* 1 1/2 cups water
*1 tsp. honey
*1 1/2 tsp olive oil
*1/2 tsp salt
*2-4 cups flour
*1 tsp garlic powder (optional)


Mix water, oil, honey & yeast.
Add salt, garlic powder, & 2 cups of flour.
If using a mixer add the remaining flour until the sides of the mixer come clean.
If kneading by hand knead 7 mins. add one cup at a time until the right consistancy. (smooth and elastic.)
Divide dough and roll out on pizza stone for skinnier crust. (for thicker don't divide)
roll out dough on pizza stone and pierce dough with a fork.
bake at 450 degrees for about 5 mins.
add toppings and bake for about 10 mins.

I just topped mine with sauce, mozzarella and ham.

So Good

Monday's Menu: Pancakes

We've been eating Pancakes a lot lately. Probably because we have been super busy, traveling a lot and Kyden loves them. He has become a little bit of a picky eater. So we will make whatever he will eat.
We just use the bag one but I saw this idea on Pinterest and thought I would share it for today and also share some Homemade Maple Syrup. My husband's family never buys syrup from the store they just make it so when I got married we adopted this tradition. It has saved us a lot of money.

Homemade Syrup
  • 1 cup water
  • 2 cups sugar
  • 1/2 teaspoon Mapleine Imitation Maple Flavor

Boil the sugar and water then add the Mapleine.

Monday's Menu: Banana Bread

I got this recipe from a really good friend. This is seriously delicious bread.

Banana Bread

1/2 cup butter
1 cup sugar
2 eggs
1/2 tsp. salt
1 tsp. vanilla
1 tsp soda
2 cups flour
3 bananas, mashed
1/2 cup chopped nuts (optional)
couple shakes of cinnamon (optional)
couple shakes of nutmeg (optional)


cream butter and sugar in bowl. beat in eggs, salt , vanilla. mix well. sift together soda and flour. add to creamed mixture. add bananas, cinnamon, nutmeg, and nuts mix well. pour in greased loaf pan. bake 300* for 1 hour or until bread test done.

I like to use the smaller loaf pans. I think it cooks more evenly. It's also nice to give away~

wanna know a secret? I made this yesterday and ate a whole small loaf by myself.. It is that good

Monday's Menu: Taco Casserole

Taco Casserole

Ingredients

    1 lb ground turkey (beef or chicken)
    2 cups shredded cheddar
    2 cups mild salsa
    2 cups corn kernels
    1 bag corn tortilla chips (8 ounces)

Directions

  1. Brown ground meat and drain. Mix with corn and salsa.
  2. Layer half of the chips on the bottom of a lightly greased 9x13 pan.
  3. Top with half of the meat mixture and half of the cheese.
  4. Repeat the layers and cover with foil.
  5. Freeze at this point, if desired.
  6. Bake at 350 degrees F for 30 min. (if not frozen) until the casserole is bubbly and cheese is melted.
  7. If previously frozen, bake at 350 degrees F for about 50 minutes or until bubbly and cheese is melted.

Monday's Menu: Grilled Cheese & Tomato Soup

Gonna be easy Cooking week because it's my birthday week!!!

Grilled Cheese & Tomato Soup

*Bread
*butter
*cheese
*tomato soup
*Milk


put some cheese between the bread.
Put butter on both outsides of the sandwich.
Cook in a pan till golden brown
Cook soup in pan following the recipe (use milk instead of water tastes way better)


This is a really good recipe for the crazy rainy weather we have been having anyway

Monday's Menu: Cheesy Bean Burritos

I'm looking for healthier food. I really am that is easy to make and that tastes good. That is hard work you know. However, this recipe is all of that

Cheesy Bean Burritos
*tortillas
*can black beans (drained)
*romaine lettuce (cut up)
*Monterrey Jack cheese (shredded)
*Salsa
*opt. Avocado

1)put some beans, lettuce, cheese, avocado and about 2 TBsp of Salsa on tortilla
2) microwave until cheese melts
