Back on Track

I was out of town for the month of May but I am starting right back up..

Frank Fiesta
8-10 frankfurters, cut diagonally into slices
1 medium onion chopped (about 1/2 cup)
1 TBsp vegetable oil
1 can (15 oz) tomato sauce
1 8 oz can whole kernel corn
1 8 oz can of kidney beans
5 ounces of uncooked spiral macaroni or wide noodles
1/2 cup water
1 1/2 to 2 tsp of chili powder
1 tsp salt
1/2 cup shredded cheese

Cook and stir frankfurters slices and onion in oil in a 12 inch skillet until frankfurters are light brown and onion is tender
stir in remaining ingredients except the cheese.
Heat to boiling the reduce heat
Cover and simmer, stirring occasionally until macaroni is tender, 20-25 mins
Serve up and top with cheese

**I cut the recipie in half so we didn't have leftovers forever**
